WHere is a simplified interpretation of a beverage found on the seasonal drinks list. Designed as a batch pre-mixed that's packed full of essence of a Christmas time, which makes it excellent for your festive gathering. Save the extra cordial for brunch beverages, sweets, or to make another batch of this cocktail.
Bikini Recipe
Makes enough for 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Place every items into a pot, heat until it reaches a gentle boil, stirring to dissolve. Next, take off the stove and leave to cool entirely. Transfer into an sterilised bottle, close it keeping it chilled, it will last for around four weeks.
For the Premix: Mix every liquids into one big jug, allow it to infuse for an hour, then filter it , ideally through cheesecloth, to ensure it's completely strained.
To serve: Pour 85ml of the cocktail base into a stirring glass filled with ice, and stir gently for one minute to cool it down. Pour into an chilled martini glass or equivalent, garnish with a few cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
